Dark & Stormy Cocktail

How to Make A Classic Dark & Stormy

Serves: 1

Ingredients

  • 2 oz Gosling’s Black Seal dark rum
  • 4–5 oz Fever-Tree ginger beer (chilled)
  • ½ oz fresh lime juice
  • Ice
  • Lime wedge (garnish)

Instructions

  1. Fill a highball glass with ice.
  2. Squeeze lime juice over the ice and drop the spent wedge in the glass.
  3. Pour ginger beer until the glass is about ¾ full.
  4. Float the dark rum on top by pouring it slowly over the back of a spoon held just above the ginger beer surface.
  5. Do not stir — the float is part of the visual. Garnish with a fresh lime wedge.

Notes

Rum: Gosling’s Black Seal is the legally trademarked rum for a true Dark & Stormy. Other dark rums work, but it won’t be the classic. 

Ginger beer: Use ginger beer, not ginger ale, the spice is essential. Fever-Tree or Bundaberg are both excellent. 

The float creates a dramatic dark-over-amber layered look. Let drinkers stir it themselves.
