How to Make A Smoked Pear & Rosemary Gin Cocktail

Ingredients
- 2 oz dry gin
- 1 oz pear nectar or fresh pear juice
- ¾ oz lemon juice
- ½ oz rosemary simple syrup (see notes)
- 1 dash smoked salt, dissolved in ½ tsp water
- Ice
- Fresh rosemary sprig (garnish, torched)
Instructions
- Combine gin, pear nectar, lemon juice, rosemary syrup, and smoked salt water in a shaker with ice.
- Shake vigorously for 15 seconds.
- Strain into a chilled coupe or Nick & Nora glass.
- To garnish: hold a fresh rosemary sprig by the stem and briefly torch the leaves until they begin to smoke. Lay across the rim of the glass.
Notes
Rosemary syrup: Simmer 1 cup water + 1 cup sugar + 4 rosemary sprigs for 10 minutes. Cool, strain, refrigerate up to 2 weeks.
Torched garnish: The smoked rosemary aroma is the signature of this drink, don’t skip it. Use a kitchen torch or lighter.
Pear: Bosc pears are ideal for juicing in fall.
