How to Make A Lavender Lemon Gin Sour

Ingredients
- 2 oz gin
- ¾ oz fresh lemon juice
- ½ oz lavender-infused simple syrup
- ½ oz egg white
- 2 dashes lavender bitters
- Ice
- Dried lavender sprig (garnish)
Instructions
- Combine gin, lemon juice, lavender syrup, and egg white in a shaker.
- Dry shake (no ice) vigorously for 15 seconds to emulsify the egg white.
- Add ice and shake again for another 15 seconds.
- Strain into a chilled comic glass.
- Dot the foam with 2 dashes of lavender bitters and drag a toothpick through to create a decorative pattern.
- Garnish with a dried lavender sprig resting on the rim.
