Ingredients

  • 2 oz vodka or light rum
  • ½ oz pea shoot and mint puree
  • ¾ oz fresh lime juice
  • ½ oz simple syrup
  • 2 oz chilled club soda
  • Ice
  • Fresh mint sprig and snap pea (garnish)

Instructions

  1. Fill a cocktail shaker with ice.
  2. Add vodka, pea-mint puree, lime juice, and simple syrup.
  3. Shake vigorously for 12 seconds.
  4. Strain into a highball glass filled with fresh ice.
  5. Top with club soda and stir gently.
  6. Garnish with a fresh mint sprig and a crisp snap pea for a playful spring touch.

Notes

Make-ahead: The puree keeps refrigerated for 2 days, making this cocktail quick to assemble at gatherings.

Pea-mint puree: Blend 1 cup fresh or frozen peas with 8, 10 fresh mint leaves and 2 tablespoons water until smooth. Strain through fine mesh if you prefer a silkier texture.
