How to Make An Asparagus & White Wine Aperitif

IIngredients
- 2 oz dry white wine (Sauvignon Blanc or Albariño)
- ½ oz asparagus-infused vermouth
- ½ oz Chartreuse Blanc
- ¼ oz fresh lemon juice
- 1 oz chilled sparkling water
- Ice
- Grilled asparagus spear (garnish)
Instructions
- Fill a coupe glass with ice to chill it while you prepare the drink.
- In a mixing glass, combine white wine, asparagus vermouth, Chartreuse, and lemon juice with ice.
- Stir for 20 seconds until well chilled.
- Discard ice from the coupe and strain the cocktail into it.
- Top with a splash of sparkling water.
- Garnish with a lightly grilled asparagus spear laid across the rim.
Notes
Pre-dinner ritual: This is an elegant aperitif, served before dinner, it awakens the palate and celebrates spring’s first vegetable harvest.
Asparagus vermouth: Steep 3, 4 fresh asparagus spears (chopped) in 1 cup dry vermouth for 48 hours in the refrigerator, then strain. Keeps for 2 weeks.
Chartreuse Blanc: This herbal liqueur echoes the grassy, green notes of asparagus beautifully.
