How to Make A Peach Blossom Bellini

Ingredients

  • 3/4 oz fresh peach purée (or quality peach nectar)
  • 1/2 oz prosecco or sparkling wine (chilled)
  • 1/4 oz rose water (use sparingly)
  • 1/2 oz fresh lemon juice
  • 1/4 oz simple syrup
  • Ice
  • Edible rose petals and fresh peach slice (garnish)

Instructions

  1. Pour peach purée into a chilled champagne flute.
  2. Add rose water, lemon juice, and simple syrup.
  3. Stir gently to combine.
  4. Top slowly with prosecco and give a light stir.
  5. Garnish with edible rose petals and a thin peach slice balanced on the rim.

Notes

Peach selection: Use fresh, ripe peaches in late spring. If unavailable, high-quality frozen peach purée works beautifully.
Rose water warning: It’s potent, use a light hand or your cocktail will taste like a perfume bottle.
Make ahead: Prepare peach purée the morning of and chill; add prosecco only when serving.
